Breakfast Bread Pudding
w/Ham and Cheese
This is a very good breakfast dish at camp or at home as a week end starter for a day of fun. Spam© can be a good statute for the ham if you are camping out for a week or more if serving after the third or fourth day.
8 to 10 ounces, day old brioche, cut bread into 1 inch slices
3 tablespoons butter, softened
8 ounces, smoked deli ham, cubed
2 cups cheddar, shredded, mild or sharp
3 eggs
2 cups milk
1 teaspoon mustard powder
½ teaspoon salt
¼ teaspoon white pepper
Spray a 10" Dutch oven with Pam©. Spread 1 side of each bread slice with butter. Cut into 1-inch cubes; place in Dutch oven. Top with ham; sprinkle with cheese. Add eggs to a medium size mixing bowl. Whisk eggs milk, mustard, salt and pepper. Pour egg mixture over bead. Let set for1 hour. Place dutch oven over 6 charcoals. Cover with lid and place 12 to 14 charcoals on lid. Bake for 45 to 50 minutes or until puffed and golden brown ( GBD ) * and a knife inserted into center comes out clean. Spoon servings onto plates. Makes 8 servings
