                 Panguitch Potato Casserole

 

This is a good potato casserole for a large family dinner by doubling  or even at camp. All ingredients can be kept in your ice box for several days with no problem, until ready cook.        

 

3 pounds potatoes, peeled

¾ pounds cheddar cheese, grated

2 medium white onions, chopped

1cup sour cream

¾ cup buttermilk

.½ teaspoon salt

¼ teaspoon black pepper

 

In a deep 10" dutch oven, over 12 to  14 charcoals place potatoes in oven and cover with water. Boil till almost cooked though. Remove from oven and discard water. Cool just enough to handle. In a mixing bowl grate potatoes and add cheese, onions,sour cream, butter milk, salt and pepper. Mix lightly . Add mixture into buttered oven. Place oven over 8 to 10 charcoals and 12 to 13 on lid. cook for 45 to 60 minutes. Remove bottom charcoals. Discard old charcoals and replace top charcoals with all you can fit on lid to brown the top. About 10 minutes. Serve.
