                              Jambalaya

 

Jambalaya is a spice rice dish from the bayous of Louisiana. Often made with chicken, ham, sausage and/or shrimp. You could also use turtle, alagater, ham opasom.  


 

 

2 teaspoons cooking oil. 

1 tablespoon Cajun seasoning

10 ounces sausage*

1 pound  boneless chicken, cut into 1" pieces

1 small onion, diced

2 ribs celery, diced

1 green bell poepper, diced

3 cloves garluic, minced

1 ( 16 ounce ) can crushed tomatoes

½ teaspoon red pepper flakes

½ teaspoon fresh ground black pepper

1 teaspoon salt

½teaspoon pepper sauce

2 teaspoond Worcestershire sauce

1 teaspoon file powder

1 ¼ cups uocooked white rice

3 cups chicken broth

½ pound cooked shrimp  


Heat 1 tablespoon oil to a deep 12" Dutch oven over 18 to 20 charcoals. sauté onions, celery, bell pepper and garlic, until tender. Add cajun seasoning and mix. Add chicken and sausag and sauté until brown .Add and stir in crushed tomaoes. Add seasonings pepper sauce, Worcestershire sauce and file powder. cook for 10 minutes covered,with 10 to 12 charcoals on lid. Stir in rice and chicken broth.

Bring to a boil ans simmer for 20 to 30 minutes, or until liquid is absorbed and rice iscooked.Add shrimp and cook 10 minutes more to heat shrimp.


 

 

 

 

* andouille sausage if you can find it. If not use a smoked sausage
