Twice-Baked Sweet Potatoes

I told Kat (my wife ) I was going to make twice baked potatoes for dinner. She asked " Can you use sweet potatoes" I answered  "I don't think so." but that got me thinking. I looked in a few of my cook books and found out you can. Their  are many variations for them.  I came up with this one, and cooked it today. I hope you will try it, It is much like the sweet potatoes you cook in a casserole at Thanksgiving. I think with the right stuff, you could even make it a very sweet dessert, Maybe with ice cream on top.  But that's not what I was doing today. It made a very good side dish with a big ham steak.
I am also showing a good charcoal lay-out for the new  Dutch oven cooks.  I hope you find it helpful. I always include the charcoal count in my recipes.

Serves 2

2 medium to large sweet potato
2 ounes Cream Cheese, 1/4 of an 8 ounce pkg.
2 tablespoons milk
1 tablespoon dark brown sugar
1/4 teaspoon cinnomon
1/4 cup pecans, chopped

Cut 1/3 of the potato off the top, lengthwise. Place the potato in a 12" Dutch oven, including the top pieces, cut side down. bake 35 to 40 minutes, or until tender, with 10 charcoals on the bottom, and 14 to 16 on top.  Scoop out center of potato, with a Mellon baller, like a canoe, leaving 1/4 inch walls. Add cream cheese, milk, sugar, and cinnamon to potato flesh; mash until well blinded. Fill shells with potato mixture; top with pecans. Place back in same oven, bake 10 to 12 minutes, with top heat only, with 18 to 20  charcoals.until potatoes are heated through and pecans are toasted.

  2. I think a scoop of Root Beer,Clove, Ice cream,( home Made) on top and more brown sugar in it would go over big for Thanksgiving dessert.
