Sausage Stuffed Apples








4 apples, baking ( I used Honey Crisp )
1/2 pound pork sausage
4 large mushrooms

Core apples with a melon baller, Remove a little extra, but do not go through the bottom. Remove mushroom stems. Chop them and add to sausage. Stuff apples with the sausage mixture. Place apples in a 12" Dutch oven. Add a little liquid ( apple cider or water ) Cap each apple with a mushroom. Cover and place 12 charcoals under oven, and 14 to 16 on top. Bake for 30 to 45 minutes.

I don't normally like sweet and slavery together, but what goes good with pork? Apples! I loved this dish after trying it. It's a very good harvest time dish, and I thought it would be a very good side dish for Thanksgiving.
