lemon Sauce

It's sauces that elevates your dishes to a gourmet status. Here is an easy lemon sauce that can go on most any vegetable, or pasta. A 6" or an 8" dutch oven is all you need, but can be done in any oven.

2 tablespoons butter
1 tablespoon all-purpose flour
3/4 cup water, or broth of choice
1 egg yolk
1/3 cup lemon juice
2 teaspoons lemon zest. minced


In an 8" dutch oven with 8 to 10 charcoals under it, melt butter. Add flour, cook stirring for one minute. Remove from heat and gradually add water. Return to heat and stir constantly until mixture boils, and thickens. Remove from heat and whisk in combined egg yolk, lemon juice, and zest. Return to reduced heat, (4 to 6 charcoals) and stir over gentle heat for 3 to 4 minutes. Toasted nuts of your choice my be added, for pasta. Ready to serve.
