This is an old slave bread. They were cooked in the fields on there hoes. They were forbidden to cook in there shakes. They are as simmple as can be.
1 cup yellow cornmeal
1 teaspoon salt
1 teaspoon Ancho powder
fresh creaked black pepper
3/4 cups boiling water ( must be boiling or will not work)
2 tablespoons bacon drippings
Combine first 4 ingredients in a bowl. Stirring constantly, add boiling water in a slow thin stream. Beat until batter is smooth. Pat out cakes with your hands-if batter is too hot,use a spoon. Place on a cast iron lid or on the bottom of a dutch oven, coated with the bacon drippings and fry until golden brown. Turn and repeat. Serves 4. Some times I add chopped green onions, or chopped up pig skins.
I had to google ancho powder but can easily substitute some kind of chili powder I think. i will give this a try. Cant say I have seen pig skins for sale but certainly have green onions available.
