Topsy-Turvy
Chef Lagasse, Emeril, Was holding a fan recipe contest and the chosen ones got to come on his show to see him cook their recipe. One of the winners was a Topsy-Turvy Applt Pie. The Man said he just thought it up one day and sent it in,WELL, I'm sorry ,but the recipe is over 80 years old. As I have mentioned before, I have over 1600 cookbooks, and I did my research, and found it in at lest 5 of them over 20 years old. Am I jealous, yes I would give any thing to be on his show. Here is the recipe. It would be a very good one for a cook-off.
TOPSY-TURVY APPLE PIE
2 11" pie shells
1/3 cup butter
2/3 cup pecan halves
2/3 cup brown sugar, packed
6 large apples peeled, cored, and sliced
1 T lemon juice
1 1/3 T all-purpose flour
1/3 cup sugar
1/2 tsp cinnamon, ground
1/2 tsp nutmeg, ground
1 pinch salt
Preheat lid only to 400 degrees F with 12 to 14 charcoals on top.
Spread room temp. butter on the bottom and sides of a 10" dutch oven. Press the pecans, rounded side down, DOWN, into the butter layer. Pat brown sugar evenly over nuts, ( be fancy the way you lay out the nuts) then lay one pastry shell over brown sugar. Place apples in a large bowl and sprinkle with lemon juice. In a small bowl combine flour, sugar, cinnamon, nutmeg, and salt. mix well. Toss mixture with apples, and coat thoroughly. Spread apples into pie. Cover the apples with second pastry shell. Crimp edges of pastry and make steam holes in top. Cover with preheated lid and place oven over 12 t0 14 charcoals. Bake 50 minutes. As the top crust starts to turn a little brown, remove 6 to 7 charcoals from the bottom. Remove all top coals. Cool 5 minutes. With very heavy gloves, Invert oven,lid and all. Set on lid stand. Carefully remove oven from lid. Serve warm or cool.

Bill Ryan and Jeff Jimes of Louisiana are competing at the 2010 IDOS WCCO. They have submitted a recipe for "Upside Down Apple Pie" for their Semi Final Dessert. I was thinking it was a pretty interesting recipe. Can't wait to try it.

My Son is my photographer, and he will get the pic up some time tonight. This is so goooooog, and so good looking, you can't lose with it. good to hire from both of you. Can wight to get back to S.L.C. were I belong, (dutch oven country)
ReplyDeleteSorry! No officiants meant to the rest of you. I'm sure you all have good groups, but not here in Medford OR. I haven't been able to get more then 3 D.O. cooks together in 5 years. We need help from NOR.CAL. and CENT. OR. bad. I love hearing from all of you.
