Camp Breakfast

Camping is just around the corner, an I for one LOVE breakfast in camp. We camp a lot at Farewell bend campground on highway 62. or Diamond Lake. We have been known to take all but dinning room table. And , yes we take the kitchen sink. We still tent camp, but we don't ruff it. Oue camp looks like an Army kitchen. Dutch Ovens, Pantry, Prep table, the works, but we eat well.
I hope you try and like this one.

Ham and Eggs Hash

1/2 stick butter
1 lr. onion, chopped
1 lb. cooked ham, diced
1lb. cooked potatoes, diced
1 cup Cheddar cheese, grated
2 T. ketchup
2 T. Worcestershire sauce
6 eggs
5-6 drops of Tabasco sauce
1/2 t. salt
1/4 t. pepper
fresh parsley, chopped, for garnish


Preheat a 12" dutch oven with 16 charcoals on top, 8 on the bottom. Melt half the butter in that oven. Saute the onions until soft. Place the onions in a bowl, mix in the next 6 ingredient, season with salt and pepper. Spread ham and potato mixture in your preheated oven, about 1" thick. Bake for 10 minutes. Make 6 wells ( I use a poaching cup for this) one in the middle and 5 around the sides. Break each egg , one at a time, into a bowl and slip into one well at a time. In your 5" oven , malt the remaining butter, season with the Tabasco sauce, then dribble the seasoned butter over the eggs and hash. Bake for 15-20 minutes or until eggs are set to your liking. Garnish with parsley and serve.

This one day and Aebelsivers the next. Life can't get better than at came.

    I'm a member of the LSDOS in Texas, Dogwood chapter. If you are lazy scrambled eggs would work also.

  2. Yes it would Ralph. That's what recipes are for , a place to start. You make it personal. I have been in IDOS member for about 20 years and loved every minute of it, but it just isn"t as populer here in so. OR. I am tring to change that. Keep the pots hot and cookin'. Good luck with the scrambles and stay in tuch.
