Wagon Wheel Hominy

Some people have told me, They don,t like hominy. All hominy is, is corn with the skin removed by stoking it in lye. I have changed the mind of many with this recipe.

2 cans yellow hominy
3 strips bacon, cooked and chopped into pieces
1/2 cup chopped onion
5 tablespoons salsa
1 cup grated Pepper Jack cheese
1 large can whole chiies
1 large button mushroom

Reserve 2 whole chilies, and chop the remaining chilies. In a 10" dutch oven, mix hominy, onions, salsa, cheese, bacon, and chopped chilies. Cut the 2 whole chilies in 4 the long way. Place the 8 chili strips on top like wagon spokes. Living the mushroom round, carve the top in a hexagon, to look like a hub and nut. Cover, and place 14 charcoals on it. Place oven over 6 charcoals. Bake at 350 for 20 minutes ,or until hot through. Serve
