Golden Oats Pilaf (D.S.)

This one may sound a little odd, but is very good, and it is also healthy. The oat bran cereal is a little hard to fined, but worth the time looking for it. This colorful, fresh side dish is fast and easy.

1½ cups Old fashioned Oats, uncooked (Quaker)
1/3 cup oat Bran hot cereal, uncooked (Quaker)**
3 egg whites*
½ teaspoon salt
1 cup mushrooms, quartered
1 small green bell pepper, chopped
½ cup green onions, sliced
1 tablespoon vegetable oil
1 can (10½ oz.) low sodium chicken broth
1 medium tomato, chopped

In a medium mixing bowl, combine oats, oat bran, egg whites and salt until well coated; set aside. In a 10" Dutch oven, over 10 to 15 charcoals, Sauté mushrooms, green peppers, and onions, in oil 2 to 3 minutes, or until vegetables are crisp-tender. Add oat mixture; cook about 5 to 6 minutes, stirring constantly until oats are dry, separated and lightly browned. Add broth; continue cooking 2 or 3 minutes or until all liquid is absorbed. Stir in tomato; serve immediately.

* Save the yokes for an egg custard or some thing..
** I have looked it every store in the Rogue Valley, and can not fine Quaker Oat Bran hot cereal.. So I recommend  Hodgson Mill. I found that at WINCO's
