Baked Mojo Fries
I forgot this one. I just found it in some of my very old papers in the garage.It must be 12 or 15 years ago I did this. Try it and let me know how you like it.
Ingredients
6 small Russet potatoes
1/4 cup Canola or peanut oil
2 Tbsp Your favorite barbecue dry rub seasoning
2 Tbsp Corn starch
Method
Preheat your 12" or 14 dutch oven to 375ยบ.
Wash the potatoes, and dry them with paper towels.
Cut each potato in half lengthwise, then cut each half lengthwise into three equal wedges, and put them in a large mixing bowl.
Add the oil to the mixing bowl, reserving one tablespoon.
Toss the potatoes in the oil to coat them.
Combine the barbecue seasoning and corn starch in a small bowl, and mix well with a fork or small whisk.
Add the seasoning and corn starch mixture to the bowl and stir the potatoes to coat them evenly.
Oil your dutch oven well
Pour the potatoes on the oiled oven and arrange them so that they each wedge is sitting on the skin side (cut sides up).
Bake for 45 minutes, or until the fries are golden brown and crispy.
Serve and enjoy!
I served mine with homemade fry sauce.
(Makes about five servings)
Home made Utah style fry sauce. 1 part Mayo, 1 part catchup. ( I like it with B.B.Q sauce better.)
