Over the Top

A good sauce makes good food so much better. sauces take so little time to make, yet add so much to the dish. This one works very well with chicken or pork. The other white meat.

Drunken Cream Sauce


3/4 cup light rum
3 tablespoons light brown sugar
3 tablespoons lime juice
3 tablespoons soy sauce
1 teaspoon Accent ( or other flavor enhancer)
1/2 teaspoon crushed red pepper
1/4 teaspoon nutmeg, fresh ground
1/4 teaspoon ground ginger
1/4 cup butter
3 cups mushrooms, sliced
2 cups sour cream

Combine in a medium bowl rum, sugar, lime juice, soy sauce, red pepper flakes, and seasonings and mix well. Melt butter in an 8" dutch oven, over 8 to 10 charcoals. Add mushrooms to oven and saute about 3 minutes. Reduce heat to 6 or 7 charcoals and stir in rum mix. Cover and cook for 5 minutes, stirring once. Remove from all heat and stir in sour cream. Spoon over cooked chicken or pork, garnish and serve.
