I would do this one at camp or on a weekend brunch. It is very quick and easy to do.
4 tablespoons butter
8 extra large eggs
2 slices ham (about 4 ounces) cut in narrow strips
1/3 pound Brie cheese, cut into small cubes
2 tablespoons fresh chives,chopped
Coarse smoked salt
fresh ground black pepper
Preheat a 12" dutch oven. Bring a kettle of water to a boil. Use 4 10fl-oz ramekins.Place 1 tablespoon butter in each ramekin. Break 2 eggs into each ramekin. Scatter the ham and Brie cubes over the eggs. Sprinkle with the chives, salt and pepper to taste. Place ramekins in preheated dutch oven, pour boiling water around ramekins, until it reaches halfway up the sides of the ramekins. Caver with lid and bake until eggs are set to your liking. About 11-12 minutes for whites to be set and yolks soft. About 15 minutes for yolks to be set. !6 charcoals on the bottom, and 24 on top.
I found the Brie to be a little mild for me. I will try Goat cheese next time. I think you can get 8 in a 16" oven, for a larger group.

I had something similar in Seattle but with Gruyere. It was delicious!
