                  Cheese-Frosted Cauliflower

 

 

1 medium Cauliflower head. Intact

½ cup mayonnaise

2 teaspoons prepared mustard

¾ cup cheddar cheese, shredded

 

Remove leaves from bottom, Trim base from cauliflower. Leave head whole. Place on a rack with short legs in a deep, 10" or deep, 12" Dutch oven with 12 or 14 charcoals under oven. Add water to oven just to bottom of rack. Place lid on oven. Bring to a boil. Steam until tender. Remove cauliflower and pour out water and remove rack. Place cauliflower in small cake pan and place in oven. Return lid and place 14 to  16  charcoals on lid.  In small mixing bowl, combine mayonnaise mustard, spread over cauliflower. Top with shredded cheese. Bake until cheese is melted and bubbly.
