                     Cowboy Pocket Food

                           ( Doughnuts ) 

 

Recently I was told, most of my recent recipes are soups and Stews. Today I am going to do something different. Doughnuts. In the old trail drive days the drovers would spend most of the day in the saddle and no time to stop for lunch. They would stuff there pocket with a few to eat on the go. 

1¾ cuts All-purpose flour

½ teaspoon salt

2 teaspoons baking powder

½ baking soda

¾ cup sugar

1 egg, beaten

½ cup buttermilk

1 teaspoon butter, melted*

4 cups shortening, ( I use Crisco © )

In large mixing bowl add flour, salt, baking powder and baking soda. whisk well to mix all ingredients. In a separate large mixing bowl add eggs, beat well, Add sugar and beat until well blended. Add milk to egg mixture and then slowly add melted butter. After mixing in butter slowly add flour into egg mixture. As you mix, the dough should become firm enough to roll. DO NOT OVER ROLL Over rolling well make tough doughnuts. Lightly dust work surface with flour and roll dough to about ¼- inch thick. Cut with a doughnut cutter. In a deep 12" Dutch oven over 12 to 16 charcoals.add shortening and bring to 350° to 375°f. ( doughnuts mast float, it not add a little more shortening.) . Gently drop doughnuts into the oil and allow to rise and brown on under side. Flip and cook for about 2 minutes, until brown.Remove to paper towels and allow to cool. Dust with powder sugar or cinnamon sugar.

.* This is were a 5" or 6" Dutch oven comes in hand. I know many of may not have one. A small sauce pan will work.
