St. Nick's Green Breans

This one is about as old as they come, As a kid I disliked it very much,,, now I love it.  How knew.

1 ½ pounds fresh green beans, stems cut off ( if very long, cut in half )
1 ½ cups water
½ teaspoon salt
6 slices bacon, fried crisp
1 small onion, chopped
2 tablespoons flour
1 tablespoon vinegar
2/3 cup cream
1 (2.8 oz.) can French fried onions.

In a 12", or deep, 12" Dutch oven ,over 12 or 14 charcoals, fry bacon till crisp. Drain bacon on pepper towel and crumble. Reserving 2 tablespoons bacon dripping, Cook beans in boiling, salted water. Drain water, and hold beans, and dry oven with a paper towel. Return 2 tablespoons of bacon drippings,  sauté onions til clear, not browned. Add flour and stir to make a roux (paste); add vinegar. and cook till thickened. Return beans to Dutch oven. Just before serving, stir in cream, place in a serving bowl and sprinkle with bacon and French fried onions.
