Meaty Spanish Rice (* D.S. )

* Diabetic Style

   This is a main dish I have had the pleasure of eating since 1950. I don't know were my Mother got the recipe, but I have made a little change to it to make it work for the family with diabetics. It always was one of my favorites, and with the changes it still has a great flavor.

2 tablespoons butter
½ pound ground turkey
1 mediun onion, chopped
1 medium green bell pepper, chopped
2 cups water
1 can (8 ounce) tomato sauce
1 cup uncooked long-grained rice
2 tablespoons Worcestershire sauce ( whats this here sauce. L.O.L. )
½ teaspoon chili powder
½ teaspoon thyme, dried
¼ teaspoon hot pepper sauce
1/8 teaspoon cayenne pepper
      black pepper to taste

In a 10" or 12" dutch oven, over 12 or 14 charcoals, melt butter. Add the ground turkey, onion, and green pepper; cook until meat is brown and vegetables are tender. Add all remaining ingredients and bring to simmer. Move some charcoals from the bottom of oven and place on lid,  Cover and simmer until rice is tender, about 35 minutes. Makes 4 servings.
