Going camping with a large group, Scout troop, or a family reunion? I have a big Dutch oven breakfast for you. This will serve 12 good eaters. For slicing the potatoes, use a slicer and keep them at about 1/8" thick. If this doesn't start the day off right, well! I don't know what to say.
2 pounds hot link sausage, cut in 1/4" pieces
1/2 pound bacon. cut up
1 bunch green onions, chopped, wights and greens
6 pounds Yukon gold potatoes, peeled and sliced
1 small can green peppers, diced. ( Ortagas)
18 eggs, beaten
1 pound Sharp cheddar cheese, grated
In a 14" Dutch oven, over 16 to 18 charcoals, brown sausage, and bacon. Drain off fat, and remove half the meat, set aside. Removing some charcoals from bottom, down to 12, add potatoes and cook about 30 to 40 minutes, covered with lid, and placing 16 charcoals on top. Stir peppers and onions into eggs, and pour over potatoes, Return lid, cook 15 minutes more. Add cheese and reserved meat on top. Replace lid for 5 minutes. Serve to group.
