Now that I have M.G. (Myasthenia Gravis) I have to eat soft foods. I can't chow food very well. Most of my old recipes are for the old me.( younger me) So I am looking for things I can eat and enjoy. You well be getting things I am finding, rather than the ones I make up.This one can also be a good camp dish. I found it on a package of Johnsonville Sausage.
8 ounces spaghetti cooked and drained, (I liked Angele Hair )
12 to 16 ounces Smoked Sausage, sliced
1 tablespoon olive oil
8 ounces fresh button mushrooms, sliced
2 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
2 cups grape tomatoes, cut in half
1/4 cup fresh basil, torn
In a 10" to 12" Dutch oven, brown sausage in oil for 4-5 minutes, over 12 to 14 charcoals. Add mushrooms, garlic and seasoning Cook until mushrooms are tender. Stir in tomatoes, basil and prepared pasta. Toss lightly, heat through. Serve. good with camp garlic toast.
Camp Garlic Toast
Toast French bread on a camp toaster, or on an inverted D.O. lid, over 16 to20 charcoals. Cut a large garlic glove and rub the cut side on the toast, using the toast like sand paper. You can also add melted butter, and Parmesan, or Romona Cheese. Place back on toaster or D.O. lid face down to brown.
