Maple Baked Beans

You may think a recipe with canned Pork and Beans, to be a little modern, but it's not. Recipes for pork and beans were in print as early as 1832. Heinz pork and beans were available as early as 1880, and Van Camp's as early as 1895,  Beans seemed to be popular, or tolerated, by Cowboy on the trail, and used by Old Coosy, "Chuck wagon Cooks', in the Dutch ovens. In those days cans were called "Air tights " They may not of carried many of them on the chuck Wagon, But did have a few. This recipe could be called an old one, or used in some old time cook-offs.

3 cans (15 oz. each) pork and beans
1/2 cup onions, finely chopped
1/2 cup green peppers, finely chopped ( bell or Anaheim if you like spicy)
 1/2 ketchup
1/2 cup maple syrup
1/2lb. bacon, cooked and crumbled
2 tablespoons jalapeno( optional )

In a 10" Dutch oven, Combine all ingredients, except bacon. Cover an cook for 30 to 45 minutes, with 8 charcoals on the bottom, and 13 on top, or until all veggies are tinder. Just before serving, stir in crumbled bacon.

  1. Looks like a winner, I plan on picking up some maple syrup in Maine next month when I head up there to camp. Love the real stuff, for sure! I'll have to give this on a whirl.

  2. I love Dutch oven baked beans and this looks like a great recipe. I often get told that baked beans are even better when you do the beans from scratch, instead of using canned. Have you ever done that?

  3. Yes! I think there is a recipe or two, a year or so back. Just click on older posts and go back and I think you will find them. I even have a recipe for pork and beans from dried beans. Have fun looking at all the older posts. About 400 of them now. Keep the Dutch ovens hot. The outlaw Gourmet
