Mulled Cider

If you are going out to cut a Christmas tree in the next week or two,this is a very worming beverage. Have some one stay in camp and have this ready for you. They will probable be happy to stay behind any way.

Serves 4

5 cups unfiltered, unpasteurized apple cider
2 teaspoons finely grated lemon zest
2 cardamon pods, slightly crushed
2 cinnamon sticks, broken in half
6 whole cloves, slightly crushed
4 allspice berries, slightly crushed
2 orange slices, halved, for garnish
cinnamon, for garnish

In an 8" Dutch oven, combine the cider, zest, cardamon, cinnamon sticks, cloves, and allspice. Over a single burner, or 12 charcoals, bring to a boil. cover and simmer for 10 minutes. You may need to remove a charcoal or two, to just simmer. Strain into 4 mugs. Float orange halves in each mug and sprinkle the cinnamon on top. Serve HOT!
