Here is the recipe for the potato skins I did at the D.O.G. Saturday. They must of been good, they were all eaten.
4 russet potatoes
Vegetable oil
4 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons smoked paprika
2 tablespoons Parmesan cheese, grated
2 tablespoons parsley, minced
salt and pepper to taste
chives, chopped
Wash and scrub potatoes; pat dry. Rub potato skins with oil. In a 14" dutch oven place a trivet on the bottom, Place potatoes on the trivet and bake at 425°f with 14 charcoals on the bottom, and 22 on top, for 1 1/2 hours or until done. Remove potatoes from oven and cool. Cut each in half lengthwise and carefully scoop out center, leaving about 1/4" layer of cooked potato. Cut each half in half lengthwise. Brush inside of potato with olive oil. Sprinkle with garlic, seasonings, cheese, parsley, and chives. Place back in oven on trivet, move all bottom charcoals to top and bake for 20 to 25 minutes more, until crisp and lightly browned. serves 16
