Back in the Days



As some of you may know, I am a Chef in a nursing home. Evey day I cook the items on a menu that comes down from corporate. Lately Foccocia ( Italian flat bread) Has been on it, once a week. So, this story has been in my mind for a few weeks now! Twenty-five years ago I entered my first Dutch oven Competition at the Utah State Fair. For my bread, I baked Foccocia. Not a well known bread back in that day. I didn't win any thing that day. After the judging was over I got the judges remarks. " Your bread did not rise, it was to flat." Dick Stucki Consoled me with the words, "Not all the judges know food trends the way we do, and knot to worry, your bread was very good". I have gone on to win many competitions and love the judges. I just thought you may get a kick out of this, and may be some encouragement. Not all dutch oven cooks compete, but just love to cook in them. Keep on cooking for what ever reason you do it for. The fun, The friends, the good food.

  1. Co-incidence maybe, I have been making a few sourdough bread variations over the past week. Thinking of all the breads I have tried to cook and what I felt was generally the most popular and it was a type of focacia bread that I cut in strips. Certainly not a high rise but the grandkids loved it. I must revisit it :)you have given me the incentive
