Buttermilk Ice Cream

If your going to have cobbler, you must have ice cream. I found this in some old Cowboy Kitchen recipe papers. I am sure it was never served out on the trail, but at the bunk house often. If you are going to make your owe ice cream, do it right. The buttermilk makes it much richer.

Buttermilk Ice Cream

1 cup water
1 cup sugar
2 cups buttermilk
juice of 1 lime
1 tablespoon corn syrup
pinch of salt
1 teaspoon lime zest, grated

In a 8" or 10" dutch oven, combine the water and sugar, bring to a boil. Remove form heat and let cool, then refrigerate until chilled. Add the buttermilk, lime juice, corn syrup, salt, and zest. Freeze in an ice cream churn according to machine instructions.
