Paul's Cookies and Pork Loin

Pork Loin

Pork Loin cut to an open roll and laid out flat. Seasoned with smoked Kosher Salt, Fresh Oregano, Fresh Thyme and Freshly dried Sage. Pork was then rolled and tied then seasoned again.

Put Pork roll into bottom of HOT Dutch oven to sear. Once seared on both sides reduce coals on the bottom to ½ the normal amount and put them on top to help roast the meat. After 1 hour put vegetables on top rack and continue to cook for an additional hour. Remove meat and vegetables and make gravy from the drippings. Serve meat and veggies with gravy and enjoy!

Pear Sauce Cookies

1 c. pear sauce (or applesauce)
1 tsp. Soda
½ c. shortening
2 eggs
1 c. sugar
1 tsp. Soda
½ tsp. Cinnamon
½ tsp. Cloves
½ tsp. Nutmeg
½ tsp. Salt
2 c. flour

  1. Mix pear sauce and soda. Set aside.
  2. Cream shortening, eggs, and sugar until fluffy.
  3. Add pear sauce mixture.
  4. Sift together dry ingredients and add to mixture.
  5. Drop by teaspoon on greased cookie sheet.
  6. Bake at 400 degrees for 12 minutes.

Frosting

4 TBS soft butter

¼ Cup warm milk

½ Tsp Orange Flavoring

Powdered Sugar mixed in to your consistency. (App. 2 cups)
