Meat Loaf for Two



This is not my best meat loaf, but a very good one. It fits in a 6" oven. I made it the other day with 1-1/2 pound of meat and an 8" oven, so I would have sandwiches the next day. This recipe came from a Bobbie Carson- Nashville, Tennessee in about 1991. It was for the regular home oven, but, as you know the old black pots dose so much for all foods.

1 pound ground beef (I use Sirloin)
dash celery seed
1/2 cup onion, fine chopper
1/3 cup milk
1/4 cup bread crumbs
1 egg, beaten
1 tablespoon Worcestershire sauce
3/4 cups Home Made brand, Chili sauce

In a large bowl combine the ground beef, celery seed, onion,milk,bread crumbs, eggs, and Worcestershire sauce. Mix well, but do not compact the mead. Shape into a ball and place in an 6" dutch oven. pour chili sauce over the top of the meat loaf. Bake at 350°f. for 45 minutes, with 3 charcoals on the bottom, and 10 on top. It is done when internals temp. is 165°f..

This makes a good camp dish. If ground beef is frozen, and in a cooler, it will be good for 4 or 5 days.
