Hush Puppies

Hush Puppies are a Southern dish. much like corn bread, but deep fried. A little oniony to. They go good with southern bean dishes, Black eyed peas, fried chicken, or fried fish, ( Cat fish ) is a slandered. A mouth or so back I gave you a tip on deep frying in the D. O. . You may want to try some fried pickles, while you are at it. They also are a Southern standers too.

1 cup yellow cornmeal
1/4 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 large egg
3/4 cup milk
1 tablespoon onion flakes, reconstituted
canola oil (or your fav ) for deep frying

In a small bowl, combine cornmeal, flour, baking powder, onion flakes, and salt. Mix well with a whisk. Add milk and egg. Stir until well mixed. Heat oil in a 12" deep oven to 365°f. . Drop batter in hot oil, 1 tablespoon at a time ( or small ice cream scoop. almost golf ball size) Do not crowed. Fry for 1 to 2 minutes, until golden brown, and carefully turn over. Fry same on other side. Remove with slotted spoon to a paper towel to drain. Some may like to dip them in Honey butter, or Ranch Dressing.
