Bean and Pork Soup

" Baby it's cold out side." Cold weather calls for warm, comforting foods, like Hearty Soups. This is one I make two or three time each year. You might like to fix it at the Camp-Fire dog. The warmer you what to get, the more hot sauce you put in it.Ha. Ha!

1 tablespoon olive oil
2 cloves garlic,crunched
1 large onion, diced
6 slices bacon, chopped
8 ounces pork, boneless ( I use country style ribs) diced bite size
2 medium tomatoes, peeled and chopped
2 stocks celery, chopped
1 carrot, diced
1/2 small cabbage, shredded.
1/2 fennel bulb, shredded
1/2 teaspoon thyme, dried
6 cups chicken broth, caned or boxed
2 10 ounce cans beans (small white, great northern, or cannelloni)
Hot sauce optional

Heat a 12,deep or 14 " dutch over, using about 20 charcoals on the bottom. Add bacon , and brown crisp. Add onions and garlic and cook 1 to 2 minutes. Add pork and cook until almost done. Add tomato, celery, carrot, cabbage, fennel, thyme and chicken broth. Cover oven, and add 16 charcoals on top and reduce the bottom to 6. Let simmer for 1 hour and 15 minutes. ( change charcoals after 45-50 minutes) Add beans and hot sauce if using, and cook for 15 minutes more. Serve hot.
