Corn Meal Pancakes

I am kind of stock in my old recipe book. I hope thats all right with you. I get tired of the same old pancake, so I worked with a old southern pancake until I got one I liked. Let me know how it works for you.

2 large eggs, slightly beaten
4 cups buttermilk
1/4 cup vegetable oil
2/3 cup all-purpose flour
3 cups yellow cornmeal
2 teaspoons baking soda
2 teaspoons sugar
1 1/2 teaspoons salt (You can cut that bake a little if you like)
(Cornmeal needs salt)

Heat an inverted lid of a 14" dutch oven on a lid stand, with about 18 charcoals under it. (350° f ) Grease lightly with oil or bacon grease. In a large mixing bowl, combine dry ingredients; mix well. Add wet ingredients; mix well. Pour about 1/4 cup of batter for each pancake onto lid-griddle. Cook for1 to 1 1/2 minutes, turning when edges look cooked and bubbles begin to pop on surface. Continue to cook until golden brown. Makes about 2o 4" pancakes.

  1. I find your recipes very interesting, some of them I dont recognise the ingredients and they may not be available to me in Australia.

    I have the stuff to make these and will give it a go :)

  3. I made these, now my cornmeal was called italian polenta here :) might be coarser than what you use. The phone rang and I was a while and it had seemed a bit runny but thickened up as it waited for me :) I liked the flavour.

  4. I'm glad you liked this. It is one of my memories of my grandmother. She would always may them for me when we would go to visit.
