Lima Bean - Sausage Casserole

These old black pots seem to be well known for there beans and potatoes. Out camping or on the trail, or even the back yard, you can't get away from bean. These baked bean have flair and flavor. They take a little time ,but well worth it. You need two or three pots to get this all done.

2 cups dried lime beans
Salt
16 link sausage
1 1/2 cups onion, chopped
1/2 cup green pepper, chopped
1 cup tomato sauce, home made or caned
1 tablespoon brown sugar
1 tablespoon molasses
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon dry mustard
1/2 cup Cheddar cheese, grated

Cook lima beans in boiling salted water for 2 hours, or until tender. ( cast iron or other, your chose.)
In a 12" dutch oven, brown sausages lightly. Remove sausages and drain off all but 2 tablespoon of fat. Add onions and green peppers to reserved fat in oven. Cook until just tender. To vegetables in oven, add tomato sauce, sugar, molasses, salt, pepper, mustard and lima beans. Arrange sausage on top in a design. Sprinkle with cheese. Bake 30 minutes at 350 for 30 minutes or until heated through.I use 8 charcoals on the bottom, and 16 on top.
