Steak Stack'n

When posting recipes, you must give credit where credit is due. Most of the recipes on this blog have been my own, but this time I am going to give you a recipe from Dick Stucki's book "Dutch Oven Cookin'. I think this is one of the best books on D.O. cooking you can get. To order it, just click on the icon at the upper right of this blog. Dick, his wife Pam, and I, have done this recipe at many Classes years age.

Steak Stack'n

1 1/2 lbs round steak
2T. bacon grease (drippings)
8 strips bacon, cooked crisp, crumbled
2-3 medium potatoes, shredded
4-5 medium carrots, Shredded
4 sweet onions, sliced
2 sweet bell peppers, sliced
1/2 cup water
flour
salt and pepper to taste

Cut round steak into Quite large individual servings Pound in as much flour on both sides as possible. Cook bacon first, until crisp, leaving bacon grease in bottom of Dutch oven. Brown steaks on one side until nicely brown in bottom of Dutch oven with bacon grease. Turn browned side up and quickly brown on the other side. While meat is cooking, place a mound of each vegetable on top of each steak piece, with peppers and onions on top. Salt and pepper between layers if desired. Pour in water, cover and simmer. Steam until vegetables are tender. When done, remove each steak intact with vegetables.

    Weird part is I have been following your blog for awhile already. I have 13 Dutch Oven and USED to cater with them a lot, but my husband just had back surgery so his days of pumping iron pots are over.

  2. I think I already told you , we use to camp at mirror lake a lot, and stopped at your place on the way back to S. L. C. We now live in Oregon.OH well! there is worst places. I have been a member of I.D.O.S. for 20 years. I love to cook, and dutch oven is the best way. Some day we will be back that way and stop in. Thank you. Ron Clanton The Outlaw Gourmet.
