Sourdough Starter

So you couldn't find any sourdough starter. None of your friends had any, nor the store. O.K. I will help you with that. You must feed and take care of it now. This seems to be the best of many recipes.

6 cups of water
6cups of flour
1 large potato
1 tablespoon of sugar

Bring the water to a boil. Meanwhile, peel and quarter the potato. Add the potato to the boiling water and cook until soft. Discard the potato and stir the potato water into the flour. Sprinkle with the sugar and mix again. Cove with a towel and allow to set in a worm place for 24 to 36 hours. Remove to a glass or stone crock or bowl to feed and store your starter. After use, feed with 1/2 cup worm water, and 1/2 cup flour. You should use and feed daily. If your not going to use it for a week or two, store in the refrigerator, remove for refrigerator at lest 12 hours before using.
You can feed it 2 or 3 days with out using and give a cup or two, to a friend. Never touch it with metal. All ways stir with a wooden spoon.
