This is a real standard bean recipes at the Chuck Wagon. The more times you reheat them the better they get. Great for your next camp out or trail drive.
4 cups prepared beans ( picked and soaked)
1 cup dark molasses
1/2 lb. side pork (bacon) diced
1/4 cup brown sugar
1 small onion diced
2 tablespoons vinegar
2 teaspoons dry mustard
2 cloves garlic minced
1/2 teaspoon cayenne pepper
1 tablespoon chili powder
In a 12" deep dutch oven, fry side pork until soft and beginning to turn brown. Add onions fry until then begin to turn clear. Add all remaining ingredients. Simmer covered , for 4-5 hours, stirring often. Use 10 charcoal briquettes on the bottom, and 14 on top. Remove all ash, and replace with new charcoals ever hour, so start a new batch after 45 minutes. This will assure you of having new charcoals on the hour.
To very this standard recipe, you may add other vegetables, such as green or red bell peppers, Pablonos, or hotter peppers, corn, celery, or even cooked rice. have fun with your food, and make it yours.
