diabetes recipe, Linguine with Red Pepper Sauce

I received an e-mail asking for more of my diabetic recipes a week ago. So here comes one, but they are good for all of us. Hope you all enjoy.

Cooking spray
1 teaspoon olive oil
1 1/2 cups chopped sweet red pepper
1 garlic clove, crushed
2 tablespoons chopped fresh basil
2 tablespoons balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
6 ounces linguine, uncooked
fresh whole basil sprigs

Yield: 6 (1/2 -cup) servings

Coat a 10' dutch oven with cooking spray; add oil. Place over 10 -12 charcoals and heat until hot. Add sweet red pepper and garlic; cook uncovered,30 minutes, stirring often. Remove from charcoals and let cool. Place pepper mixture in contained of a blinder; add chopped basil and next 3 ingredients. Cover and process until smooth, stopping once to scrape down sides. In a 12" oven , with 12 to 14 charcoals, cook pasta to package directions, omitting salt and fat. To serve, top pasta with pepper sauce Garnish with basil sprigs
