Potato Cheese Patties

Here is a fun one for me, because I like using my led as a griddle. Use a lid stand, up-side down, place about 18 charcoals around it, place a 14" lid up-side down. Now you have a griddle.


1 1/4 lbs. potatoes
4 ozs. Rogue creamery blue cheese
4 scallions, finely chopped
3 Ts. fresh dill, chopped
1 egg, beaten
1 T. lemon juice
all-purpose flour, seasoned, for dredging
3-4 T. canola oil
salt and pepper to taste

In a 12" dutch oven, boil potatoes in their skins, in lightly salted water until soft. Drain, peel and mash while still warm. Combine the blue cheese into the potatoes and add the scallions, dill, eggs, and lemon juice. Season with salt and pepper. Stir well. Cover mixture and chill until firm. Divide the mixture into walnut-sized balls, then flatten them slightly. Dredge with flour. Heat the oil on the lid and fry the potato patties until golden brown on both sides. Drain on paper towels and serve hot. Good for an appetizer or a side dish. Also very good with Coka Cola Kielbasa (recipe given last August )
