Luck and Prosperity

The new year is upon us,and it is traditional, in the South to have Hoppin' John, to bring Luck and Prosperity to the new year.

Hoppin' John

1 pk frozen black eyed peas
1/2 lb salt pork
1 cup onion, chopped
1 lg garlic, minced
1 1/2 quarts cold water
1 cup long-grain rice
1 cup boiling water
salt
hot pepper sauce
chopped parsley, for garnish


Fry salt pork in a 12" dutch oven, until golden brown and the fat is rendered. Add the onion and garlic and cook until softened,stirring occasionally. Pour off excess fat ,only to keep a teaspoon. Add the peas and measured cold water. Bring to a boil, with 12 charcoals, and simmer gently for 30 minutes, removing 1 or 2 charcoals as needed for just a simmer. Cook 30 minutes, stirring occasionally.
Sprinkle the rice over the bean mixture and stir in, then simmer 20 minutes longer, covered or until the beans and rice are tender and all excess liquid is absorbed. Add boiling water while cooking, only if needed. Season to taste with salt and hot pepper sauce, then spoon into a wormed serving bowl and scatter parsley to garnish. Serve hot with more hot sauce for thoughts how like it hot. Serve with a good, Southern Cornbread, and greens.
