Summer is almost over and fresh corn on the cob will be gone. This is a very good recipe,calling for caned corn. GIVE IT A TRY. Let me know how you like it.
1 large onion
1 large red bell pepper
1 large green bell pepper
2 tablespoons olive oil
3 gloves garlic
2 cans(about 2 1/2 cups each) sweetcorn
4 eggs
3 tablespoons all-purpose flour
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 teaspoons chili powder
Prep onions and bells and cut in small dice. Peel and crush garlic. In a 12" dutch oven over 12 to 14 charcoals, saute onions and peppers, add garlic. Saute about 4 minutes. Drain the canned sweetcorn through a sieve and grind in a food processor. Whisk the eggs in a large bowl. Add sweetcorn, the pepper and onion mixture, and the flour. Stir thoroughly and then season with sugar, salt pepper and chili powder. Pour the mixture back into the 12" dutch oven. Bake with 9 charcoals on the bottom and 15 on top, for 12 minutes. Remove bottom heat and place it all on top, bake 30 to 35 minutes more, or until a golden brown on top. Serve
