Good Practice

I always enjoy demos, today I was asked by one spectator "why was my bread burned on one side and row on the other" I asked was it a windy day. "yes" A good practice on a windy day, is to turn your oven 1/4 turn clock-wise and your lid 1/2 turn every 10 minutes. The side the wind hits gets to cold, and the other side has, like a vacuum, so it gets very hot. Keep turning it ever 10 minutes, for the entire cooking time to stop this form happening to you.
